Curried Sweet Potato Soup
Serves 2
Ingredients
2 tbsp Butter
1 Brown onion
2 Cloves garlic
2 tsp Sharwood’s curry mild or hot powder
2 Large sweet potatos
500ml Chicken or veg stock
To serve:
Bacon bits
Croutons
Chives
Double cream
Instructions
Step 1
Peel and chop the sweet potato into small cubes
Step 2
Dice the onion and garlic
Step 3
Heat a large pan
Step 4
Add the butter, onion and garlic and fry for 2-3 mins until soft
Step 5
Add the sweet potato, Sharwood’s curry powder, salt and pepper and cook for 2-3 mins
Step 6
Add stock and simmer for 20 mins or until potatoes are soft
Step 7
Blend until smooth
Step 8
Serve with a swirl of double cream and top with crispy bacon bits, croutons and chives
